Aloo tamatar (Potato with tomato curry) recipe – no onion no garlic recipe

Aloo tamatar sabzi is an easy and quick curry made with potatoes and cooked in tomato gravy. It is prepared without the use of onion and garlic. Aloo tamatar sabzi is an ideal side dish for vrat ki roti during Navratri or fasting days. It can be done in a jiffy as the ingredients required are easily available at home. Ingredients

  • Potatoes - 4 (medium sized)
  • Tomatoes - 5 (chopped finely)
  • Cooking oil - 3 tablespoons
  • Cumin seeds - 1 teaspoon
  • A pinch of asafoetida
  • Turmeric powder - 1/4 teaspoon
  • Red chilli powder - 1 teaspoon
  • Coriander powder - 2 tablespoons
  • Salt to taste
  • Chopped coriander leaves - 2 tablespoons

Method

Step 1

HOW TO MAKE ALOO TAMATAR SABZI RECIPE Wash and boil the potatoes with enough water till just cooked. They should not be too mushy. Once cooled down, peel and chop them into equal pieces. Set aside

Step 2

Heat a pan on a medium flame. Add cumin seeds and stir till light brown.

Step 3

Add chopped tomatoes and cook till they become little soft and oil is separated from the sides of the pan.

Step 4

Add salt, red chilli powder and coriander powder and mix well.

Step 5

Add chopped potatoes and combine together. Add 1/2 cup of water and cook on a medium flame for 6-7 minutes till it reaches a thick consistency.

Step 6

Garnish with coriander leaves and serve aloo tamatar sabzi hot with rotis or puris. IMG_4906
